The thesis from freshness research: roasted coffee is intrinsically unstable, losing key aromatics within days and its protective CO₂ within weeks — but storage choices meaningfully change the slope.
What disappears first
Fresh coffee’s signature aroma hinges on ultra-volatile sulfur compounds.
